Observed rice cooling in large containers that were not vented and placed in small reach-in cooler. Reach-in cooler had condensation on the inside glass pane and internal temperature around rice was higher than the safe 41F. COS: PIC discarded rice. Only one other TCS-food item (pork) was within the cooler. Pork had an internal temperature of 41F, in SAFE zone.
