Observed time/temperature control for safety (TCS) foods in walk-in cooler being cold held above 41°F. Ambient temperature of cooler was about 48°F with the temperature of TCS foods measuring around 45-46°F. TCS foods must be cold held at 41°F or below. COS by discarding.

The certificate of Lauren Rogers was posted, however, she is the District Manager and does not oversee food handling on a daily/regular basis. At least one employee that has supervisory and management responsibility and the authority to direct and control food preparation and service shall be a certified food safety manager who has shown proficiency of required information through passing a test that is part of an accredited program that conforms to the national standards for organizations that certify individuals. Certified Food Safety Managers must be designated to one food service establishment only and maintain and renew certification in accordance with the requirements of the examination taken. NOTE: CFSM must be for someone who is actively working at facility for a majority of each week such as a General Manager or Assistant Manager. Must have within 30 days. Health Authority will follow-up to verify.
