Observed sausage in steam well 2 at a temperature of 126°F. Observed potatoes in steam well 3 at a temperature of 126°F in front food service. Advised PIC that TCS food shall be maintained at 135°F or above. Corrected on site: Sausage was discarded. Potatoes were reheated to 200°F.
