Observed multiple TCS Foods in various coolers including RIC (salad and raw salmon) and the PTC (Raw chicken) in the main kitchen and the front-food service RIC (multiple single-service containers of salad) just prepped cooling tightly covered. Discussed proper cooling methods with PIC. Under refrigeration loosely covered or uncovered or utilizing ice baths.

Observed visible light entry at the back door of the facility. Outer openings shall be protected from the entry of pests and rodents by sold, self-closing, tight-fitting doors. Stated to the PIC to install weatherstrip at the back door of the facility.
