Observed cooked cheese sticks holding at 120 degrees Fahrenheit and cooked mixed vegetables holding at 128 degrees Fahrenheit. All cooked TSC foods must hold at 135 degrees Fahrenheit or higher. Foods were observed returned to oven and reheated to 170 degrees Fahrenheit. Warming cabinet found to be working improperly. Manager agreed to discontinue use and have maintenance repair unit.
