Observed the chlorine sanitizer in the three compartment sink at the bar did not contain the minimum required strength concentration. The chlorine sanitizer was observed at 0 ppm. PIC corrected on site. Observed cheese dip that was being hot held at a temperature below 135 degrees f on the steam table. PIC was advised to reheat to 165 f on the stove for hot holding. PIC was asked if the cheese dip was initially rapidly reheated. The cheese was not initially properly reheated for hot holding. PIC and cook corrected on site and will reheat rapidly using the stove moving forward. 511-6-1.04(5)(h) - Reheating for Hot holding (P) (h) Reheating for Hot Holding. 1.
