Observed two containers of rice (47 F and 46 F) above 41 F inside the reach-in cooler with a prep date of 7/7/26 at 4:35pm. The ambient air temperature of the unit was 39 F. Possibly the containers of rice were not properly cooled down. Also observed white rice inside the Chef's cooler (54F and 49F). The Chef's cooler was not closed all the way so that could possibly contribute to the increased temperature. Observed liquid eggs at the grill in an ice bath above 41F. The ice has melted. The eggs were discarded. Also observed TCS foods at the sushi station above 41F. Per PIC, the prep top cooler and display case has been open for long periods of time to prep orders. The ambient air temp of the unit is 62F. PIC moved food items to upright reach-in coolers to decrease in temperature. All cold hold Time/Temperature Control for Safety (TCS) foods must be 41 F or below. COS: Rice and liquid eggs were discarded.
