Observed multiple TCS food items such as hot dogs, bacon, and beef tips being stored in the reach in cooler that was not cold holding at 41 degrees or below. Also observed TCS food items such as shredded cheeses, sliced cheeses, deli meats, and sliced tomatoes being stored in the walk in cooler not cold holding at 41 degrees or below. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. (P).

Also observed that the walk in cooler was not holding an ambient temperature of 41 degrees or below. The walk in cooler holds mostly non TCS food items such as fresh produce and tortilla shells. Utensils shall be maintained in a state of repair or condition that complies with the requirements specified under subsections .05(1) and .05(2) or shall be discarded. (C) Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.
