EHS observed boxes of mixed chicken in the back corner of the walk-in cooler that were temping between 44-47 F. *************** 511-6-1.04(6)(f) - Time/Temperature Control for Safety; Cold Holding (P) (f) Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above. ********************** C/A: PIC informed EHS that chicken was temped earlier this morning (approx. 9:30) below 41 F, but temp logs were not available. Out-of-temp chicken is to be discarded. Boxes on other side of wall were in temp, so EHS recommended storing chicken in this area in the future. PIC also stated that door had been left cracked several times today and the out-of-temp boxes are located directly across from the door.
