Could not locate thermometer in refrigerator in the lobby at the breakfast area (no food in unit). Corrective Action: Instructed PIC to obtain thermometers for all cold hold units and to check them daily to make sure they are holding at 41oF or below for refrigerators and 0oF or below for freezers.

Discussed with PIC that wood is a sponge and will absorb stains, odors and bacteria and that any surface in the kitchen must provide for a smooth, nonabsorbent surface.
