Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. Inspectors recorded 3 violations, 2 of them critical, involving cleaning & sanitizing and plumbing & water.
Observed in use sanitizing cloths used to wipe down counters and to wipe down in use food utensils. Also it was observed that a wiping cloth was being held inside a prep top cooler with raw chicken. Notified PIC that the same cloth cannot be used for both of these functions and that a wiping cloth cannot be stored in this location.

Also observed a drain by the main fryer with no cover. The PIC placed a makeshift temporary cover to maintain drain integrity.
