Inspectors recorded 3 violations, 2 of them critical, involving management & training and handwashing & hygiene.
Observed sliced cheese, lettuce, tomatoes, and other items with discard labels reading to discard product on 2/4 at 9:55 am. I temped the items at 9:50 and they were in temperature. I then saw an employee change the labels without discarding the product after the 4 hour time limit. Do not replace the label when time runs out. Ensure to discard food then replace it with a new batch of tomatoes, lettuce, and other items and only then add a new label for that food product with the four hour time frame.

Informed person in charge to discontinued use until dish machine and switch to 3-compartment sink method until the dish machine is repaired and I confirm it is reading a minimum of 160F PL.
