B87July 8, 20262 violations
Inspectors recorded 2 violations, 2 of them critical, involving temperature control and handwashing & hygiene.
At time of inspection, numerous Time/Temperature Control for Safety (TCS) foods observed at temperatures exceeding 41 degrees F, in the reach-in cooler (RIC) in the main kitchen. COS: PIC discarded all out-of-temperature TCS foods. PIC states all TCS foods that are out-of-temp. have been in the RIC for an extended period. The only TCS foods in the RIC that were observed to be in-temp. are the Refrigerated Pre-Cooked Scrambled Eggs (delivered by Sysco recently) - these items have been moved to another cooler, capable of storing them below 41 degrees F. PIC had Maintenance assess the RIC, and he discovered that the fan is iced over, preventing the unit from cooling properly. Maintenance is defrosting the unit. PIC states that the unit will not be used to store TCS foods, until it is verified that the unit is capable of holding TCS foods at temperatures less than 41 degrees F.

Inspectors recorded 1 violation, 1 of them critical, involving temperature control.
At time of inspection, several TCS items observed at temperatures above 41 degrees F in the reach-in cooler in the main kitchen (boiled eggs, half & half, hydrated waffle mix, egg beaters). COS: PIC discarded all TCS foods that were held at temperatures above 41 degrees F. It was first thought that the items may be elevated in temperature due to the items being moved around and the refrigerator doors being opened repeatedly during breakfast clean-up. Items were re-temped at conclusion of inspection (after more than an hour had elapsed) and the temperatures were not coming down. The facility had received a delivery earlier this morning. PIC states he will monitor the temperature of those items (the invoice was examined to determine which items were new) and will move those items to another refrigerator and ensure that they are held at 41 degrees F or below.
