A91October 29, 20262 violations
Inspectors recorded 2 violations, 2 of them critical, involving temperature control.
Two reach-in-coolers were out of temperature and reading at 36-38° F but internal temperature of time and temperature controlled for safety foods read at 49-55° F. COS: All TCS foods above 41° F discarded and maintenance contacted to service RIC units later that day. Charlton EH ordered the units to not be used until they kept TCS foods at or below 41° F. A reach-in-freezer near the prep line is not keeping all foods solid as required. Internal temperature was under 41° F, but frozen foods must stay solid. COS: Foods were immediately dropped into the fryer to cook and serve and maintenance to service RIF.
−9 points · Cited as “511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)”Time as a public health control required procedures not being followed due to foods being out of the maximum temperature of 41° F and no temperature logs kept as required showing the temperature of the foods when removed from temperature control. COS: Discarded TCS food items and Charlton EH instructed PIC that temperature logs must be maintained in order to use TPHC. When using TPHC, cold foods may be held a maximum of four (4) hours regardless of internal temperature provided that the food is 41° F or lower when removed from temperature control (unless previously approved for a different time frame).
