Inspectors recorded 2 violations, 2 of them critical, involving cleaning & sanitizing and temperature control.
Observed dishes being washed with a final rinse temperature of 122F per dishwasher display screen. EHS also used the high color contract color change temperature strips, and test strip did not change colors. EHS also check sanitizer level (chlorine) and observed 0ppm. PER PIC DISHWASHER IS LOW-TEMP, CHLORINE SANITIZING. C/A: Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration, and Hardness. A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under subsection (8)(b)3 of this Rule shall meet the requirements specified in DPH Rule 511-6-1-.07(6)(g), for chlorine 50-100ppm Facility is to wash dishes in the 3-comparment sink until dishwasher has been service and is reaching the proper final rinse temperature (160F). Dishes observed in dishwasher during sanitizer testing were placed in 3-compartment sink to be washed. Sanitizer solution in 3-compartment sink observed at 400ppm. Correct by 12/9/2024.
