B89July 7, 20261 violation
Inspectors recorded 1 violation, 1 of them critical, involving temperature control.
Observed zip lock bags with eggs, potatoes, and sausage that were being cold held in the reach in cooler in the kitchen at temperatures greater than 41. COS, PIC discarded the potatoes since they had not cooled below 70 within the time allowed and then moved the eggs and the sausage to the reach in freezer to get to 41 and below since time allowed. Discussed the cooling process that they are using and give them some options that may help. Recommended that the items removed from the bar be placed in the freezer for approx. 1 hour then take a temperature and if cooling at a rate to achieve 70 or below, the item can be moved to the reach in cooler. suggested keeping a temp log for a t least two weeks to ensure the proposed method works and work out any issues if needed.
