OBSERVED PREVIOUSLY COOKED GROUND BEEF AT 88 DEGREES F IN HOT HOLDING TO BE SERVED, AFTER DISCUSSING WITH THE PERSON IN CHARGE IT WAS DETERMINED THAT THE FOOD ITEM WAS NOT PROPERLY BEING REHEATED BEFORE BEING PLACED IN THE STEAM WELL, AND THEY WERE ATTEMPTING TO REHEAT IT TO BE SERVED. BASED ON THE TIME FRAME OF WHEN THE FACILITY OPENED THE FOOD ITEM WOULD NOT BE AT PROPER TEMP. THE PIC REMOVED THE GROUND BEEF FROM THE STEAM WELL, AND REHEATED IT TO 188F BEFORE PLACING IT BACK INTO THE STEAM WELL.
