Observed cold holding TCS foods being held above 41°F, including cheese sticks at 51°F, three trays of beans at 51°F, and sausage at 50°F. The ambient temperature of the reach-in cooler was 51°F. The person in charge (PIC) stated that the food items were placed in the reach-in cooler after breakfast service ended. The reach-in cooler was not maintaining a sufficiently cold temperature for proper cold holding. All TCS foods were moved to the walk-in cooler. The PIC was informed that TCS foods must be maintained at 41°F or below and placed in a properly functioning cold-holding unit to ensure adequate temperature control. The PIC was advised that the reach-in cooler must be serviced and repaired to ensure it maintains an ambient temperature capable of keeping TCS foods at 41°F or below. The reach-in cooler, with an ambient temperature of 51°F, was not adequate for maintaining TCS foods at the required temperature.
