Observed in the main kitchen’s prep top cooker , a container of raw shell eggs stored behind a container of chopped onions. Also observed in the main kitchen’s WIC a container of raw shrimp and raw chicken stored above multiple packages of eggroll wrappers. Foods, raw and ready to eat, shall be stored according to final internal cook temperature. COS: PIC rearranged prep top cooler and WIC for proper storage hierarchy.

Advised PIC Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and: After engaging in other activities that contaminate the hands. All employees shall wash their hands again upon re-entering the food preparation area.
