Observed roast beef stored under the heat lamp on the slicer at 128°F, below the required hot holding of 135°F. Also, sliced roast beef stored in the water drawer was observed at a range of 118°F - 138°F (multiple areas are below 135°F). Corrective action: all time/temperature control for safe food shall be maintained at 135°F or above for hot holding. Corrected on-site: the roast beef on the slicer was discarded, and the sliced roast beef will be used for public health control and will be discarded at 1 pm if not used.

The person in charge was informed that the sanitizer dispenser shall be serviced since the concentration was above 400ppm as required. Also, PIC was instructed to add water and use a sanitizer test strip to ensure the concentration is between 150ppm and 400ppm until serviced.
