Observed jalapeño vinegar carrots and onions that had been cooked stored at room temperature 72f. Once it is cooked vegetables must be held below 41f or above 135f. I observed several tcs items in walk in that were not being held at 41 or below, pork, cheese. The walk in has lots of food in containers and some of the shelves have hard plastic covering them. You may need to improve circulation or run the cooler at a colder temperature 36f to ensure food is at 41f or below.
